What can YOU do in 2 years?

'Aging is for people who don't know any better.'-Tony Horton (Early 20s----Early 30s) Today is not only Transformation Tuesday, but also the Eve of my 2 year ‘Fit-aversary’! Two years ago, I made a life-changing decision for myself. I honestly am not even sure what I was thinking, but now I know about Mel Robbins and her 5 second rule related to decision-making. ‘You can’t control how you feel. But you can always choose how you act’- Mel Robbins. I committed to 60 days of Insanity—exercising 6 days a week, following a set workout calendar. I committed to waking up every morning before the sun (and before my kids!). Little did I know how much of an impact those choices would have on me…. Over the last two years, I have…. *Exercised in the early morning 6 days a week consistently, with only 2 exceptions: my England trip and the two weeks following my burn accident *Erased the words ‘I can’t’ from my vocabulary (because really, what I meant by that was ‘I don’t want...

‘The Katie Kitchen’ : Weekend Experiments

Anyone else have a terrible sweet tooth? Anyone else love to experiment with making new yummy treats? Just me? Okay, well I’m happy to do the work and share my creations with y’all! :) Blueberry Banana Bread My friend Erin told me about a banana bread recipe that she had discovered...when she said, ‘I can eat 1/4 of the loaf as one serving with no guilt’, I knew I had to try it! I adapted and veganized to make it my own! 4 bananas 1/4 cup maple syrup 2 cups old fashioned oats 1 cup blueberries 1 tsp baking soda 2 flax eggs {2tbsp flaxseed + 6tbsp water} Blend all except one banana in food processor. Grease loaf pan and slice banana into bottom of pan. Pour mixture in. Bake at 350 for 30ish minutes. Enjoy! Carrot Cake Balls I love to make balls and bars to have as a grab and go treat. This recipe even has VEGGIES in it, so that’s a total win! 1 cup baby carrots 7-8 pitted dates 1/4 cup maple syrup 1/4 cup cashews 1/4 cup almonds 2tbsp coconut oil 2tsp cinna...

These are ALL examples of strong...

Life is FULL of contradictions

I am this, but I'm not that... I love to write, and I want to resurrect my blog. I don’t know what to write about, and I’m not the best with technology. I can’t sit still for an hour to watch a show on television. I can read 2-3 books every week and take long baths almost every night. I love watching my kids grow and learn new skills. I get antsy if I sit on the floor playing with them for too long. I am loud, I enjoy people, I talk a lot, and I like making people laugh. I often avoid or dread social situations, and I love my alone time. I want to utilize more natural, nontoxic products in my home. I wear a full face of makeup every single day. I eat a plant-based diet with very few processed foods. I’m married to someone who loves to hunt, and my children are Lunchable addicts. I exercise every day, and need that time for my own sanity. I am terrified to join a gym or attend a fitness class and exercise with others. I am growing a vegetable garden and maki...
